Good morning! I slept in this morning – it’s now 6:30. I’ve always been a night owl who has had a hard time getting up in the morning. But now that my schedule is not being driven by outside forces, I usually go to bed around 9 o’clock and get up around 5:30. Go figure.
Okay – for the old one, two, three. Physically, feel pretty good. Have a few aches and pains, some soreness. Mentally, thinking clearly. Emotionally, feel a little flat, but not bad for first thing in the morning.
I finally deciphered the meaning of the puzzling symbol on the face of my cell phone. When I first saw it, I thought it meant that I had a voice mail. I checked my voice mail – nothing. I had a message in my inbox, perhaps? I checked; it was empty. After missing a few phone calls, I realized it was a symbol for vibrate. Vibrate doesn’t make much noise when your phone is in the pocket of a cloth purse….
As part of my recovery, I decided to cook one new dish each week. (I used to spend hours looking at cookbooks, only to put them away after being unable to decide what to try.) It’s been fun to try new recipes. I enjoy cooking more, and it keeps me from falling into a rut of eating the same things over and over. Here’s a recipe that I’ll share with you. It’s from www.cookscountry.com. It’s delicious and only has three ingredients. Ingredients are squash, melted butter, and brown sugar. Put baking sheet on middle rack in oven and heat to 400 degrees. Split a butternut squash in half. Scrape out seeds. Place cut side down on hot baking sheet. Bake until tender, 40 to 50 minutes. Remove from oven, turn cut side up, and set oven to broil. Mix brown sugar and melted butter (do not mix in advance), and brush on squash. Season with salt and pepper, if you like. Broil until browned and crisp, about 5 minutes. Yum.
Here's another new recipe. You'll find a link to this under interesting sites. I used a blender to chop the cranberries - otherwise rolled all over the counter. Lowfat, light, and delicious!
These are not new, but an old stand-by that I haven't made in a long time. Cinnamon rolls. I'm taking these to group tomorrow.
